Château Saint-Marc

Château Saint-Marc is composed of 3 grape varieties : 70% Semillon, 25 %    Sauvignon and 5% Muscadelle. The Semillon gives the power and roundness in  the wine while the Sauvignon in lesser proportion is responsible for the vigor of  the Barsac wines; meanwhile the Muscadelle, by its muscat side provides an exotic  touch depending on the year and the blending.These grape varieties are cultivated  in separate fields  to better appreciate and control the different vegetative cycles.

The cultivation of the vines is a delicate balance between modernity and tradition. The treatments and the fumures are made as similar to the environment as possible.

The harvest is the culminating moment of the cultivation of the vine. They are very specific of the region. 95% of the quality of a wine is made on the vine and specially the harvest. No technique can improve the quality of the juice of the grape. The harvest is done manually by successive picks, 3, 5 or 6 times in the same block of vines. This famous fungus, Botrytis Cinerea, removes water from the grape therefore  concentrating solids such as sugar fruit acids and minerals, the optimum concentration being around 20° ( 340 gr. of sugar per liter). And if by chance, the morning mists are mixed with hot afternoons and easterly wind, the concentration is incomparable and the perfumes of honey, dried fruits and acacia flowers.

The vinification  is mainly to allow these aromas to develop while controlling the temperatures, clarifying the wines faster or more slowly but always respecting what nature gave us.  After slow fermentations which are made in thermo-regulated stainless steel vats as well as in barrels, the wine is aged in merrain oak barrels for 2 years until the bottling process.
